Years ago, I fell in love with Ben and Jerry’s Brownie Bars, decadent gourmet ice cream sandwiches. I haven’t seen them for a long time. I don’t even know if they still make them, but it doesn’t matter because we create something similar at home now. And this is how we do it…
ICE CREAM SANDWICHES
Ingredients
1 box brownie mix and its required ingredients (We like Betty Crocker Original Supreme with Hersheys syrup packet.)
1 box vanilla or chocolate ice cream
chopped nuts, if desired
Directions
Make the brownie mix, spread evenly and bake in a well-greased 15″ x 10″ pan. (We make two boxes in two pans to make the most of our time.)
When cool, cut into 16 equal pieces, loosening around edges also so they come out clean (a flat plastic spatula works better than a knife).
Open box of ice cream and cut in slices about 3/4″ thick, then cut slices in half. (a 1.75 quart box, if cut in even pieces, will make 16 sandwiches.)
Set piece of ice cream between two brownies.
Wrap individually in aluminum foil or waxed paper, or store them together in an air-tight container if consuming soon.
So easy and so yummy!

Oh, and I did a search for Ben and Jerry’s Brownie bars – they make them, but they’re different than they used to be.
